Peanut Butter Chocolate Oatmeal

November 15, 2019 by the thoughtful spoon

This is dessert for breakfast and I'm 100% on board. Mixing cacao powder with milk, makes this oatmeal decadently delicious, adding all the chocolately flavor you could want, but with more nutrients and less calories than chocolate chips. Cacao powder, if you're not familiar, is made by cold pressing cocoa beans and is extremely high in antioxidants, magnesium, iron, and calcium (heating the beans and processing gives you cocoa powder). Pure cacao powder, similar to dark chocolate has more of a bitter profile and promotes good heart health. If you haven't been adding cacao powder to your oatmeal, smoothies or yogurt, you should definitely give it a try. To elevate this dish, I decided to also add in some sautéed banana, but this ...

Refined Sugar Free Apple Crisp

November 13, 2019 by the thoughtful spoon

These past few weeks have been quiet in the Reynolds household as we gear up for the Holiday's ahead and as temperatures drop, I am all about staying in, cozying up and hibernating. This past weekend as it hit a low of 35° in Brooklyn, Tim and I did just that. I recipe tested, we cleaned the apartment, snuggled with Summit and caught up on the newest season of Jack Ryan (love me some John Krasinski). One of the recipes I've been dying to test is this gluten free, refined sugar free apple crisp. Apple crisps are hands down one of my favorite desserts, so coming up with a 'cleaner' version has been on my list for some time. I first tested the topping for this to add to Simple Mill's Pumpkin Bread mix, in this Pumpkin Chocolate Crumb ...

Easy Chocolate Clusters

October 30, 2019 by the thoughtful spoon

I've always had a sweet tooth, especially for anything that involves chocolate. In an effort to not overindulge however, I love making little treats that are both poppable and satisfying (also check out my Frozen Banana Bites). ...

15 Minute Pumpkin Oatmeal

October 26, 2019 by the thoughtful spoon

Stoneware soup bowl by Etsy Seller, AaronsburgPottery Every Autumn my mom makes this oatmeal and it’s such a comforting way to start the day. Along with being absolutely delicious this dish is also highly nutritious and easy to whip up. Win-win-win! So, what makes this dish so nutritious you might ask? Let’s break it down… Rolled Oats Rolled oats are an excellent source of iron, soluble fiber (meaning they keep you full longer), vitamins (such as folate, vitamin B and zinc), and protein. They are considered to be one of the healthiest whole grains available and boast a number of health benefits. Along with lowering the risk of heart disease, incorporating oats into your diet has been shown to lower cholesterol, reduce ...

Roasted Summer Corn Salad

June 23, 2019 by the thoughtful spoon

One of the perks to growing up in rural New Jersey, was the quality of local farm stands near our house. Every summer, my mom would take us on weekly trips to stock up on the essentials... everything from tomatoes, to watermelon, cantaloupe and the crème de la crème... fresh Jersey corn. A dozen bi-color, in a big brown paper bag, to be shucked and cleaned on the deck when we got home. Corn has since become one of the staple summer sides in our household. Whether it be grilled, boiled, thrown into a salad, or garnishing a taco, it always has a place at our table. Luckily for me, Tim also has a love for this sweet veggie, so the summer tradition rages on. Last year, when my parents were in town, we decided to stay in and cook ...

Fast forward 9 months and while we’re so grateful for all the amazing moments we’ve had with family... it’s a little hard not to miss the place we called “home” for the past 10+ years

Crowded subways, bodega conversations, drinks at the dive bar across the street, sushi delivery at 1 am, ferry rides, Summit on the pier... after work spin classes, wine on the roof deck, midnight strolls with the city lights reflecting on the water, the energy... hanging in the park, Saturday morning farmer market runs, New York bagels (and pizza) and above all else the friendships

2020 has taught me home truly is where the heart is but part of my heart will always be in NYC
