October 18, 2019 by the thoughtful spoon

You may have heard the term health coach before, if not however, you’re not alone. I, myself, was not familiar with what a health coach was, until I started researching how I could turn my passion for nutrition and healthy living into a side project to help others.  ...

It really felt as if we read every article the internet had to offer! ...

Carbs: The Good, The Bad, The Delicious

July 14, 2019 by the thoughtful spoon

What do you think of when you hear the word Carbohydrate? Bread? Pasta? Pizza? Maybe, bad, even? I doubt most people’s first instinct is to think Complex vs Simple or Whole vs Refined, however these distinctions really do make all the difference. Spoiler alert: Not ALL carbs are bad, and despite most people thinking they need to eliminate carbs from their diet to lose weight or be healthy- that couldn’t be further from the truth. ...

Roasted Summer Corn Salad

June 23, 2019 by the thoughtful spoon

One of the perks to growing up in rural New Jersey, was the quality of local farm stands near our house. Every summer, my mom would take us on weekly trips to stock up on the essentials... everything from tomatoes, to watermelon, cantaloupe and the crème de la crème... fresh Jersey corn. A dozen bi-color, in a big brown paper bag, to be shucked and cleaned on the deck when we got home. Corn has since become one of the staple summer sides in our household. Whether it be grilled, boiled, thrown into a salad, or garnishing a taco, it always has a place at our table. Luckily for me, Tim also has a love for this sweet veggie, so the summer tradition rages on. Last year, when my parents were in town, we decided to stay in and cook ...

Self-care 101

June 20, 2019 by the thoughtful spoon

"Self-care is NOT selfish". You most likely have heard this phrase before. The concept is nothing new, the practice however, now that's a different story. If you're anything like me, it can often be difficult to take a step back and take time to focus on yourself. Work, friends, school, relationships, pets... all become a balancing act with what generally feels like negative hours left in the day. Well I'm here to remind you, that without taking care of yourself first, you won't be able to effectively show up and be present for all of those other things. ...

Fast forward 9 months and while we’re so grateful for all the amazing moments we’ve had with family... it’s a little hard not to miss the place we called “home” for the past 10+ years

Crowded subways, bodega conversations, drinks at the dive bar across the street, sushi delivery at 1 am, ferry rides, Summit on the pier... after work spin classes, wine on the roof deck, midnight strolls with the city lights reflecting on the water, the energy... hanging in the park, Saturday morning farmer market runs, New York bagels (and pizza) and above all else the friendships

2020 has taught me home truly is where the heart is but part of my heart will always be in NYC
