Peanut Butter Oatmeal Dog Treats

November 22, 2019 by the thoughtful spoon

Every year since Summit was a pup, we make homemade dog treats at the Holidays to give to his park friends. Just a little something to say ‘thank you’ for all the chasing, wrestling, and frisbee sharing over the past year. Since I know some dogs experience food allergies, I always try to make these treats as simple as possible, using ingredients that aren’t generally common in triggering sensitivities.  For this recipe, I also incorporated oats into the mix, to add a layer of additional fiber and promote that good gut health. While I haven’t decided on the final recipe to give out this year, I have been busy experimenting and Summit’s been hard at work taste testing.  You can whip these up in less ...

Peanut Butter Chocolate Oatmeal

November 15, 2019 by the thoughtful spoon

This is dessert for breakfast and I'm 100% on board. Mixing cacao powder with milk, makes this oatmeal decadently delicious, adding all the chocolately flavor you could want, but with more nutrients and less calories than chocolate chips. Cacao powder, if you're not familiar, is made by cold pressing cocoa beans and is extremely high in antioxidants, magnesium, iron, and calcium (heating the beans and processing gives you cocoa powder). Pure cacao powder, similar to dark chocolate has more of a bitter profile and promotes good heart health. If you haven't been adding cacao powder to your oatmeal, smoothies or yogurt, you should definitely give it a try. To elevate this dish, I decided to also add in some sautéed banana, but this ...

Refined Sugar Free Apple Crisp

November 13, 2019 by the thoughtful spoon

These past few weeks have been quiet in the Reynolds household as we gear up for the Holiday's ahead and as temperatures drop, I am all about staying in, cozying up and hibernating. This past weekend as it hit a low of 35° in Brooklyn, Tim and I did just that. I recipe tested, we cleaned the apartment, snuggled with Summit and caught up on the newest season of Jack Ryan (love me some John Krasinski). One of the recipes I've been dying to test is this gluten free, refined sugar free apple crisp. Apple crisps are hands down one of my favorite desserts, so coming up with a 'cleaner' version has been on my list for some time. I first tested the topping for this to add to Simple Mill's Pumpkin Bread mix, in this Pumpkin Chocolate Crumb ...

Individual Prosciutto and Cheddar Baked Eggs

November 10, 2019 by the thoughtful spoon

A restaurant near us has this dish on their menu and it's far by one of my favorite weekend breakfasts. So good in fact, that I was inspired to recreate this at home. I was pleasantly surprised to find that this dish is not only extremely easy to make but at 1/10 of the cost, an elevated addition to our breakfast repertoire. In less than 25 minutes and 5 steps this dish is done and ready to enjoy. Start by coating your skillets with a little ghee or butter, then add your eggs, being cautious not to break the yolks. Sprinkle each skillet with some prosciutto and cheddar cheese before popping in the oven to bake. It's that simple. I personally like to serve this with a side of toast or fruit, but that's just me. I hope you ...

HOW is my baby 11 months old already?! These day HOW is my baby 11 months old already?!

These days Aveline is really into walking, giving high fives, giving “kisses” (which is basically just open mouth to the face), blowing raspberries on my tummy (which is also basically just open mouth to my stomach), hugging Summit, loving on her friends from school, morning dance parties, and snuggling with her da-da.

Her little personality is developing every day and she’s so sweet, funny and just cool.

Time can seriously slow down now... at least for the next 28 days #almostone #elevenmonthsold #avelinereynolds
